Method

  1. Prep

    Make the dough

    Mix the flour, yoghurt and salt until it clumps, then knead until smooth. You want it soft but not sticky — add a little flour if it clings.

    Divide & roll

    Cut into 4–6 pieces and roll each one out to about 3–4 mm thick, dusting with flour as you go.

    Get the pan hot

    Heat a dry pan or griddle until it’s properly hot over medium-high. No oil.

    Why: Too cool and you’ll get pale, biscuity bread instead of soft and blistered.

  4. Finish

    Cook each side

    Lay one in. Cook until bubbles rise and the underside is charred in spots, then flip. Keep them warm under a tea towel.

    Brush & serve

    Stir the garlic and herbs into the melted butter, brush it over the warm breads, and pile them up.

Chef's tip

No self-raising flour? Use plain + 2 tsp baking powder. On the Woodfire, char them straight on the grates while the lamb rests, ~60–90 sec a side.
